CHOCOLATE!!!
MMMMMMMMMMMM.....who doesn't like chocolate???? Okay...I know 3 people who don't. ;) But the majority of us LOVE it. I've just had the honor to be a part of a life-changing health conference, and have had numerous requests for an easy chocolate recipe. Here it isss!
1/2 cup melted coconut oil 1/2 cup melted cacao butter or coconut butter pinch sea salt 1 cup cacao powder (I've tried MANY, and Avena Originals is my favourite cacao powder to date.) 1 or two tablespoons of raw agave, honey or maple syrup...your choice. Adjust sweetener to taste. I like it bitter so I only put in about a tablespoon. Stir together in a bowl, pour into a pan or chocolate molds and set in the fridge or freezer to chill and harden. You can add in whatever goodies you want to this simple basic recipe! I sprinkled coconut ribbons, goji berries and cacao nibs on the lovely chunk to the left.....yum!! GREEN SMOOTHIE!
I quite often get requests for smoothie recipes, and I love that!!! It means more people are wanting to choose healthier options, and smoothies are a great way to pack a lot of nutrition into one little (or big, in my case) glass. A super simple and easy one for people new to green smoothies is as follows:
Two cups of water
Two handfuls of baby spinach
Two ripe bananas (fresh or frozen)
One cup of frozen mango
** Blend until smooth! This is a really sweet, mild smoothie.....you can add more banana if you like, or try different fruit blends. Another great one is frozen mango and blueberry with spinach. Green smoothies are a fantastic way to get in those all-important leafy greens. Leafy greens are packed with protein and minerals, and are very alkalizing in the body. Enjoy a delicious green smoothie every day and feel the difference in your health!

Like the now-famous chocolate avocado mousse......it's won over many a self-proclaimed chocaholic and sweet tooth!!!! You'd never know it was good for you.....I sometimes have it for breakfast layered with banana slices and granola.
CHOCOLATE AVOCADO MOUSSE
1 medium sized avocado
6 dates, pitted and soaked overnight in just enough water to cover
1 vanilla bean....I like to soak it in with the dates. Snip off the hard little ends first
pinch salt
3 tablespoons cacao powder
*** Blend until smooth all ingredients including the date soak water. You may need to add a little more water. Enjoy, luvvies!
